• protein of choice, prepared and fully cooked
  • 1 tsp Five Spice Salt (or equal parts five spice powder and salt)
  • 2 cloves garlic, chopped
  • 1 large chilli, sliced
  • 1 spring onion, chopped
  • 1/4 onion, finely diced
  • 1/2 bell pepper, finely diced (optional)
  • 1 shallot, finely diced (optional)
  • 2 tsp shaoxing wine


Prepare your protein of choice (e.g. chicken, fish, squid) and cook. Usually this involves a light dredging or battering, and deep frying.

In a wok with a bit of oil, stir fry all the vegetables until fragrant, then add half of the five spice salt and wine and mix for 1 minute.

Add the protein to the wok and toss with the remaining salt and shaoxing wine.
